Freshly Milled Popovers

Ingredients

Makes 12 popovers.

  • 240g freshly milled soft white wheat flour 🌾

  • 4 pastured eggs, room temperature 🥚

  • 360g whole milk, room temperature 🥛

  • 85g grass-fed butter, melted 🧈

  • 1 teaspoon mineral salt 🧂

Instructions

  1. Preheat oven to 450°F.

  2. Bring your eggs and milk to room temperature by leaving both on the counter for 30 minutes.

  3. Place an empty stainless steel popover pan inside the oven while preheating. A muffin pan is fine too; place a baking sheet underneath it in case of spillage.

  4. In a medium-sized bowl, whisk eggs. Whisk in milk and salt. Whisk in flour. Leave to rest for 15 minutes.

  5. Remove hot pan from oven. Brush wells with butter and pour batter evenly into each well, about 3/4 to the top.

  6. Place in oven and bake for 15 minutes. Do not open the door.

  7. Reduce heat to 350°F and bake for another 10 minutes.

  8. Remove from the oven and enjoy immediately.
