Homemade Raw Butter

Ingredients

  • 2 cups raw heavy cream 🥛

  • 1 teaspoon mineral salt, optional 🧂

Instructions

  1. In a stand mixer with a whisk attachment, pour in raw heavy cream. Turn on speed 4 for about 10 to 15 minutes until the solids and liquids separate. Place a tea towel over the mixer. At first, the heavy cream will turn into raw whipping cream, then solidify.

  2. Pour the excess liquid, or buttermilk, into a small bowl. Then group the butter pieces into another medium-sized mixing bowl. Use a wooden spatula to press the butter into the sides, ensuring most of the buttermilk is drained out.

  3. Pour off remaining buttermilk into the small bowl.

  4. Wash your hands, then form a ball with the butter solids, gently rinsing under cold water for a couple seconds. Transfer to parchment paper. Leave as is or gently fold in mineral salt.

  5. Fold parchment paper over to form a ball and twist the top. Enjoy right away, or add foil over the paper to freeze.
