Homemade Raw Butter
Ingredients
2 cups raw heavy cream 🥛
1 teaspoon mineral salt, optional 🧂
Instructions
In a stand mixer with a whisk attachment, pour in raw heavy cream. Turn on speed 4 for about 10 to 15 minutes until the solids and liquids separate. Place a tea towel over the mixer. At first, the heavy cream will turn into raw whipping cream, then solidify.
Pour the excess liquid, or buttermilk, into a small bowl. Then group the butter pieces into another medium-sized mixing bowl. Use a wooden spatula to press the butter into the sides, ensuring most of the buttermilk is drained out.
Pour off remaining buttermilk into the small bowl.
Wash your hands, then form a ball with the butter solids, gently rinsing under cold water for a couple seconds. Transfer to parchment paper. Leave as is or gently fold in mineral salt.
Fold parchment paper over to form a ball and twist the top. Enjoy right away, or add foil over the paper to freeze.
