Freshly Milled Einkorn Muffins
Ingredients
235g freshly milled einkorn flour 🌾
1 teaspoon mineral salt 🧂
1 teaspoon baking powder ✨
1 teaspoon baking soda ✨
115g EVOO or avocado oil 🫒
1 pastured egg 🥚
240g organic Greek yogurt, plain 🥛
150g coconut sugar 🍬
1 teaspoon organic vanilla extract ✨
Instructions
In a medium-sized bowl, combine the dry ingredients: flour, sugar, salt, baking soda, and baking powder.
In a separate bowl, combine the wet ingredients: egg, yogurt, oil, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until well incorporated.
Preheat oven to 425°F. Allow batter to rest for 30 minutes.
Fill each muffin cup to the top with batter using a spoon.
Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake for an additional 14 minutes, until the muffins spring back when lightly touched.
