Freshly Milled Einkorn Muffins

Ingredients

  • 235g freshly milled einkorn flour 🌾

  • 1 teaspoon mineral salt 🧂

  • 1 teaspoon baking powder ✨

  • 1 teaspoon baking soda ✨

  • 115g EVOO or avocado oil 🫒

  • 1 pastured egg 🥚

  • 240g organic Greek yogurt, plain 🥛

  • 150g coconut sugar 🍬

  • 1 teaspoon organic vanilla extract ✨

Instructions

  1. In a medium-sized bowl, combine the dry ingredients: flour, sugar, salt, baking soda, and baking powder.

  2. In a separate bowl, combine the wet ingredients: egg, yogurt, oil, and vanilla extract.

  3. Add the wet ingredients to the dry ingredients and mix until well incorporated.

  4. Preheat oven to 425°F. Allow batter to rest for 30 minutes.

  5. Fill each muffin cup to the top with batter using a spoon.

  6. Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake for an additional 14 minutes, until the muffins spring back when lightly touched.
