Kefir Soda Recipe

Ingredients

  • 1/2 cup water kefir grains

  • 64 oz spring water, room temperature

  • 1/2 cup organic cane sugar

  • 1 tablespoon unsulphured molasses
    (Only added for the first fermentation to get started. Do NOT use every batch.)

First Fermentation

  1. In a glass jar, reserve 1 cup of warm water and dissolve the sugar completely.
    Add the remaining water.

  2. Gently add the kefir grains by tilting the jar.

  3. Cover the jar with a cloth and secure with a rubber band.
    Place in a pantry or dark spot between 68 to 85 degrees F.

  4. Ferment for 2 to 4 days.
    It is ready when you see small bubbles and it is no longer overly sweet.

Second Fermentation

  1. Gently tilt the jar so the grains stay at the bottom.
    Pour kefir water into a soda bottle using a funnel.
    Leave about 1 inch of liquid with the grains and 1 inch of air in the bottle.

  2. Add fruit or flavorings.
    Suggestions: 5 to 8 blueberries or 1/4 pear.

  3. Seal the bottle and ferment in the pantry for 1 to 3 days.

  4. Burp the bottle as needed to prevent pressure buildup.

  5. Once desired fizziness is reached, refrigerate and serve chilled.
    Use within 1 week.

Tips

  • Start a new batch every 2 to 3 days. Grains will multiply.

  • If not fizzy, your kefir may need more minerals.
    Add a small amount of molasses or a piece of dried fruit to the first fermentation.
