1/2 cup water kefir grains
64 oz spring water, room temperature
1/2 cup organic cane sugar
1 tablespoon unsulphured molasses

First Fermentation
In a glass jar, reserve 1 cup of warm water and dissolve the sugar completely.
Add the remaining water.Gently add the kefir grains by tilting the jar.
Cover the jar with a cloth and secure with a rubber band.
Place in a pantry or dark spot between 68 to 85 degrees F.Ferment for 2 to 4 days.
It is ready when you see small bubbles and it is no longer overly sweet.
Second Fermentation
Gently tilt the jar so the grains stay at the bottom.
Pour kefir water into a soda bottle using a funnel.
Leave about 1 inch of liquid with the grains and 1 inch of air in the bottle.Add fruit or flavorings.
Suggestions: 5 to 8 blueberries or 1/4 pear.Seal the bottle and ferment in the pantry for 1 to 3 days.
Burp the bottle as needed to prevent pressure buildup.
Once desired fizziness is reached, refrigerate and serve chilled.
Use within 1 week.
Tips
Start a new batch every 2 to 3 days. Grains will multiply.
If not fizzy, your kefir may need more minerals.
Add a small amount of molasses or a piece of dried fruit to the first fermentation.
