Hidden Liver Meatballs
Makes a large batch. Recipe can be halved.
Meatball Ingredients
16 oz chicken liver
5 lbs ground beef
4 eggs
2 tablespoons unrefined sea salt
4 to 6 fresh garlic cloves, crushed
1 yellow onion, peeled and chopped
1 cup freshly milled flour (hard white)
Broth Ingredients
12 cups homemade beef or chicken broth
16 oz crushed tomatoes
2 tablespoons unrefined sea salt
Instructions
Bring broth to a boil in a large stockpot and season with salt. Add tomatoes and simmer.
Puree chicken liver in a food processor or finely chop.
Mix all meatball ingredients in a bowl.
Roll into large meatballs and drop into simmering broth.
Cover and simmer on low for 20 minutes or until internal temp reaches at least 165 degrees F.
Preferred doneness is 180 to 185 degrees F.
