Homemade Tallow French Fries

Ingredients

  • 4 to 5 cups tallow 🍟

  • 6 organic russet potatoes 🥔

  • Mineral salt, to taste 🧂

Instructions

  1. Peel the potatoes and slice to your desired thickness. A potato slicer works well.

  2. Fill a large bowl with purified water and soak potato slices for at least 30 minutes. You can leave them soaking for up to 24 hours in the fridge. Remove potatoes from the water to a clean kitchen towel and pat dry completely.

  3. Heat tallow in a heavy stock pot with a deep-fry thermometer to 325°F. Add about two small handfuls of potatoes to the pot, leaving about an inch of tallow above the potatoes. Par-cook the potatoes for 6 minutes until lightly brown. Remove potatoes, gently shaking off excess tallow, and let drain on a wire rack set over a sheet pan. Repeat until all potatoes are cooked.

  4. Raise the temperature to 350°F. Cook potatoes again, a couple handfuls at a time, for 2 minutes until golden brown. Remove from tallow, shake off excess fat, and add to a large bowl. Season with mineral salt while shaking the bowl. Repeat until all potatoes are cooked. Enjoy immediately or freeze.
