Freshly Milled Einkorn Pancakes

Ingredients

  • 365g freshly milled einkorn flour 🌾

  • 1/2 teaspoon mineral salt 🧂

  • 2 teaspoons baking powder ✨

  • 2 tablespoons coconut sugar 🍬

  • 2.25 cups whole milk 🥛

  • 2 eggs 🥚

  • 1/4 cup grass-fed butter, plus a little extra for cooking 🧈

  • 30g sourdough starter, for fermentation recipe 🫙

Standard Directions

  1. Mill your flour on the finest setting.

  2. Preheat your cooking surface. Cast iron pans and griddles work well; preheat on medium-low.

  3. Mix dry ingredients in a large bowl. Add coconut sugar, baking powder, and salt to the milled flour, and stir to combine.

  4. Mix wet ingredients. In a separate smaller bowl, whisk egg, milk, and melted butter together.

  5. Pour wet ingredients into dry ingredients and mix until well incorporated.

  6. Allow the batter to sit for 15 minutes while your cooking surface preheats. This will also allow the freshly milled flour to absorb the liquids and the bran to soften.

  7. Once the cast iron is slightly smoking, lightly butter your cooking surface and use a 1/4-cup measuring cup to pour the batter onto the preheated surface.

  8. Cook the pancake on the first side until bubbles appear and the edges start to look cooked, about 2 to 3 minutes.

  9. Flip the pancake over and cook for 1 to 2 more minutes until fully cooked.

  10. Remove and serve warm.

Fermented Directions

  1. Mill your flour on the finest setting.

  2. In a large bowl, mix milk, melted butter, and 30g of sourdough starter until well incorporated.

  3. Preheat your cooking surface on medium-low.

  4. Mix flour and wet ingredients, cover with compostable cling wrap, and leave on the counter overnight for 8 to 12 hours.

  5. In the morning, add coconut sugar, salt, baking powder, and eggs to the ferment and mix well until incorporated.

  6. Once the cast iron is slightly smoking, lightly butter your cooking surface and use a 1/4-cup measuring cup to pour the batter onto the preheated surface.

  7. Cook the pancake on the first side until bubbles appear and the edges start to look cooked, about 2 to 3 minutes.

  8. Flip the pancake over and cook for 1 to 2 more minutes until fully cooked.

  9. Remove and serve warm.
