Easy Homemade Basil Pesto

Ingredients

  • 2 cups organic basil leaves

  • 1/2 cup toasted organic pine nuts

  • 1/4 cup freshly grated parmesan cheese

  • 1 organic garlic clove

  • Juice from 1 organic lemon

  • 1/4 teaspoon mineral salt

  • 1/4 teaspoon freshly ground black pepper

  • 1/4 cup EVOO, plus more if you want a smoother pesto

Instructions

  1. In a food processor or high-powered blender, combine the pine nuts, lemon juice, garlic, salt, and pepper. Pulse until well chopped.

  2. Add the basil and pulse until combined.

  3. With the food processor or blender running, slowly pour in the olive oil and pulse until combined. Add the parmesan cheese and pulse briefly to combine. For a smoother pesto, add more olive oil.
